I’m about to start a tattoo apprenticeship, and I’m also vegan. Are there any animal products in tattoo ink or any of the other products used in a typical shop? If so, what are their alternatives?

Some tattoo pigments contain glycerin. Inkedblog.com there’s a discussion thread with info you may find helpful.
